Grilled Pita Pockets
(a fan's request)

At the request of a fan, or personal taste tester if you please, I give you a quick, light, easy grilled pita pockets seasoned with vegan aioli.
Yes, it is addicting.
Maybe I should put a WARNING label on that....
LOL!


Can you say YUM?!

Step 1:  grill pan sliced veggies brushed with Olive Oil and Garlic


We grilled eggplant, yellow crookneck squash, zucchini and red pepper.



Step two:  slice yellow heirloom tomatoes and pita bread.


Step Three:  prepare aioli.... use Wildwood Vegan Zesty Garlic Aioli
(this can be found at Follow Your Heart, Whole Foods, and hopefully your local health food store)


and  mix in chopped fresh basil


Step Three:  very lightly toast your pita bread


Step Four:  assemble; use aoili spread inside pita & line with grilled and raw veggies!


Step Five:  ENJOY!!!!
