Vegan Irish Stew



Quick and easy Irish Stew
Hearty and Savory


1 medium onion, chopped
3 cloves garlic, minced
8 red potatoes, quartered
3/4 bag baby carrots
32 oz vegetable broth
1 tsp basil
1 tsp celery salt
1/2 tsp rubbed sage
1/2 tsp thyme
half a 12 oz bag of frozen peas
1 Tbsp soy sauce


In a large pot, saute onion and garlic in olive oil until soft.

Add; potatoes, carrots, seasonings and add broth just to barely cover vegetables.  

Bring to a boil, cover and reduce heat.  

Cook until soft, approximately 15-20 minutes.   

Add peas, stir and continue cooking until hot, approximately 5-10 minutes.  Boil down, stirring until desired consistency.  Remove from heat and stir in soy sauce.  Serve & enjoy!  

Variations:  Add your favorite vegan meat or beans.
