Indian~Inspired Savoury Patties with Yogurt-y Dipping Sauce


What started out as using what I had on hand to replicate my squash fritters, evolved into what I thought more resembled a bhaji and in the end seemed to fit more the profile of a pakora.  But also, would make an excellent Indian inspired veggie burger or sandwich filling.  Now, I think, maybe it's actually kind of a combination of all of those things.  So what you call this and what you do with these are entirely up to you.  

But regardless, what follows is an Indian inspired recipe for a savory little snack sure to please the palate.  
Unlike traditional pakoras, these little guys contain no wheat flour and more like the base of the bhaji, contain a combination of rice and chickpea flour.  And unlike the fritter rather than the base being a heavy dough or batter, the veggies are really what hold these guys together.
Gluten-free, vegan, made with healthy fats and protein rich nuts, baked not deep-fried, I present to you:

Indian Savouries 
with Yogurt-y Dipping Sauce 



INGREDIENTS:
(Yields 10-12 patties)

For the savoury patties-
2 cups of grated zucchini (pressed)
1 medium sized acorn squash (baked and insides removed)

1/2 cup each of red pepper and sweet onion (chopped)
1 clove of fresh garlic (pressed)
1 cup of Gluten-Free bread crumbs*
1 cup of chickpea flour
1/4 cup of finely chopped raw pecans or walnuts\
1/4 cup of finely chopped raw cashews
1 tbsp. Braggs or Coconut Amino Acids
1/2 tsp. of turmeric
1 tsp. yellow curry powder
1 tsp. of dried parsley

Preheat your oven to 425 degrees.


Mix all of the above ingredients together in a large bowl.



Brush a baking sheet generously with coconut oil and drop a tablesppon amount of your patty mixture onto the baking sheet,  Press gently to flatten the patties.  The mixture will be sticky.

Bake your savoury patties for 10 minutes on each side.  
NOTE: this recipe will yield enough to fill more than one baking sheet.  If you are using just one baking sheet, be sure to brush your sheet with more coconut oil in between batches. 


What you choose to do with them or how you choose to eat them  . . .
as is, stuffed in naan bread, or as an accompaniment to your favorite Indian dish
is entirely up to you 
but we are of  the opinion  (in our household and of friends who have sampled this dish) that these Indian inspired savoury little patties are best enjoyed, as pictured at the top of this post, with an Indian inspired dipping sauce.
