Peas Mushroom Mac N Cheese


With the cold and flu season upon us, 
I have been craving comfort foods.  
Here is my version of Mac N Cheese!  Sweet and Savory.




Sauté til soft & lightly browned
1-2 Tbsp Olive Oil
1/2 onion chopped
3-4 cloves garlic chopped
1-2 cups mushrooms chopped (I used Crimini)
1 tsp dried Basil


Stir in to coat
1/2 cup Nutritional yeast
1/3 cup flour
add olive oil as needed for crumble texture


Slowly add while stirring 
(to create paste, then sauce)
1 cup Vegetable broth
1 cup Almond Milk


Continue to cook and stir to thicken.


Add 1 cup frozen peas
cook 1-3 minutes while stirring


Add Pasta that has been cooked according to package instructions & drained!
I used 1 1/2 cups whole wheat elbow noodles.



Top with Diaya shreds and Vegan Parmesan!
(please excuse the messy plating...lol!)

YUM!
Feed a cold!  Starve a fever.... this must be a cold.
