Raw Vegan Gazspacho

I know, I know..... IT'S WINTER..... but here in Southern California it's 73 degrees today!  And as the holidays approach, my mind is set on upping my fitness regiment in preparation for consuming the heavier calories I cannot avoid at the family gatherings.  Part of this regiment includes eating lighter and healthier (more raw, more juicing) a couple of weeks prior to the upcoming festivities!  This recipe along with a simple salad of romaine and cucumber, hit the spot as my lunch! 


1 cucumber, peeled, sliced into chunks
9 plum tomatoes, cut into chunks
1/2 red bell pepper, seeded and cut into chunks
1 celery rib, de-stringed and cut into chunks
1 handful chopped fresh cilantro
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp cumin
1/8-1/4 tsp cayenne pepper (optional)
1 Tbsp lemon juice
3 Tbsp balsamic vinegar
2 Tbsp olive oil
1/2 cup filtered water


Place all ingredients into blender and liquify.
Chill in fridge for at least one hour.
Top with 1/4 avocado.
Garnish with fresh cilantro as desired.

YUM!!!  Healthy and Delicious!  
Even in the winter months, on those days when you feel like you need a bit of energy and lightness, Gazspacho is quick, easy, and loaded with nutrients & antioxidants.
