Jamaican Jerk Tofu (Sandwiches)


All that crispy flavorful goodness, that gooey cheese, the bounty of micro-greens!


Stop! "Jamaican me hungry!"

Well, then, you're in luck . . .
This is one of those easy-peasy dishes that takes minimal prep and super simple; just a slight twist on one of our ole favorite standbys in our home: fried tofu sandwiches.

Oh! And we've omitted in the rum in this marinade (traditionally Jamaican Jerk marinade calls for it) but should you wish to put it back in, you'll need about three tablespoon's worth. wink wink



It starts with this 

basic marinade 

of four ingredients:
(enough for one block of tofu)
1 cup of natural ketchup
3 tbsp. of tamari (gluten-free, natural soy sauce)
1/2 cup of malt or balsamic vinegar
2 tbsp. of water

and  

a seasoning 

comprised from these ingredients:
4 tsp. ground allspice
4 tsp. ground ginger
4 tsp. ground cinnamon
2 tsp. ground nutmeg
2 tsp. of salt
2 tsp. ground black pepper (grains of paradise, if allergic)
2 tsp. brown sugar
1/2-1 tsp. of ground red pepper
2 tbsp. of dried thyme

~Additonally you will need both garlic and onion powder.


Now you're ready to get cookin'


Mix the marinade ingredients in a shallow dish.
Drain and lightly press your block of tofu. Cut into thin slices and gently dredge the tofu into the marinade.
You can marinate for up to a half an hour or simply give the slices a slight press to absord a bit of the marinade and proceed to the next step.
Arrange your tofu on a platter or cookie sheet.
Sprinkle a light coat of both onion and garlic powder over the tofu slices and then the jerk seasoning.
In a large frying pan, heat one tablespoon of olive oil.
Fry the tofu until brown and lightly crispy on both sides.
Continue until all of your tofu has been cooked. 
NOTE: with the sugar in the seasoning, you may find that your tofu begins to stick a bit.  Simply add a bit more oil to your pan and if need be, wash your pan in between batches. 

Assemble the Jamaican Jerk tofu atop your favorite bread smeared with a bit of vegan mayonaise and add your fave veggies.
We opted for spinach, grilled onions and mushrooms and a bunch of micro-greens.
